What is A Quiche

Quiche is a French egg based pie that is traditionally made with Swiss cheese. You may have heard the term before- Quiche Lorraine. It literally is just swiss Lorraine cheese baked into the egg with pie crust base.

I am not a fan of Swiss cheese, therefore I have always used Cheddar or Greek Feta in my recipe, especially if making bacon quiche. To easily make this a keto friendly quiche, use the keto crust recipe listed below.

Quiche Crust Ideas

A Quiche is almost always made with a traditional flour based pie crust, however there are many variations as well. Including:

  • Making a quiche without crust OR
  • Almond flour and Coconut Flour crusts are great LOW CARB or KETO Alternatives like THIS Keto Quiche has.
  • Using Bacon as a Crust- OH YES, I have done it. Precook your bacon till almost done, but still bendable. Layer into a round pie plate, bake until crispy. Dab with paper towels to remove grease. Pour in quiche mixture, bake as normal. Oh yes.
  • Store bought canned dough like crescent or biscuit dough. Some would argue that it isn't a quiche at that point because pie crust is not being used, however we think you can get away with it!

Flavor Ideas for Quiche

Spinach & Feta- 1 Cup frozen cut spinach, thawed & drained. 8oz. feta cheese broken into crumbles. Mix into the egg mixture, pour into pie crust. Bake as directed in recipe card. We suggest using the feta blocks, pre-crumbled feta is more dry and lacks the flavor because it is not in it's brine.

Easy Basic Quiche Recipe plus 4 Ideas & Keto Version (10)

Western Style- 1 Cup total of mixed diced onion, green pepper and red peppers. 8oz. shredded Monterey Jack ( Or Pepper Jack for some spice), 1 Cup cooked crumbled breakfast sausage (no casing, like the Jimmy Dean roll). Add all ingredients to the egg mixture. Pour into pie crust. Bake as directed in recipe card.

Easy Basic Quiche Recipe plus 4 Ideas & Keto Version (11)

Ham & Cheese- Purchase a ½ lb thick cut piece of your favorite ham from the deli. Dice into cubes. Mix into egg with 8oz orange sharp cheddar cheese. Bake as directed in recipe card.

Easy Basic Quiche Recipe plus 4 Ideas & Keto Version (12)

Steak & Cheese-This is by far one of my favorites. Start with 12oz. shaved steak from the meat department OR Roast Beef from the deli. Saute in a little Olive Oil or butter. Now, we don't usually use this stuff, but it's a MUST here- 6oz of Velveeta (there I said it!) cubed (so creamy!). Pour into pie crust with egg mixture. Bake according to the recipe card.

Notes

Dairy of choice- This quiche recipe base has been tested with Milk only, Half & Half and Unsweetened Original Almond Milk only.I personally could not tell the difference in either. A true quiche uses a French full fat cream. I choose to cut back on fat & calories and use Almond Milk.It really is your choice. The flavor is not affected enough for me to suggest using one over the other, especially is certain dietary or health restrictions prevent using certain dairy.

FOR KETO APPROVED QUICHE- Use Our Keto Crust and ½c Heavy Cream + ½c Almond Milk. It's That Easy! Bacon and Cheese is Already Keto approved.

Pie Crust- We suggest using deep dish pie crust (or deep dish pie pan) , if using regular size then cut the recipe in half. Otherwise you will have too much filling.

FAQs

Is heavy cream better than milk in quiche? ›

Heavy Cream and Milk – For the best tasting quiche, use a combination of whole milk and heavy cream. (Or simply use half-and-half.) Using just heavy cream produces an overly thick filling. Whole milk is great, but a combo of heavy cream and milk is better.

What can I use in quiche instead of heavy cream? ›

Use half-and-half as a 1:1 substitute for heavy cream. It can work nearly as well for bringing creamy texture and flavor to sauces, soups and stews, mashed potatoes, quiches, and casseroles.

How long does crustless quiche last in fridge? ›

Serve it with a side salad or a bowl of soup. Store your crustless quiche in an airtight container in the fridge for up to 5 days! To freeze this, I prefer to cut it up in slices then wrap each slice individually in plastic wrap tightly then place them in a freezer bag and freeze for up to 3 months.

Do you have to blind bake pastry for quiche? ›

Do I need to blind bake pastry cases when cooking with wet fillings? As a general rule, you do need to blind bake when cooking a dish with wet fillings. For example, if you're making a quiche or frangipane, blind baking the crust first will help ensure the pastry case stays buttery and retains its crunch.

What is the ratio of eggs to milk in a quiche? ›

Quiche Ratio: 1 large egg to 1/2 cup of dairy

You'll need to increase the amount of eggs and milk based on the size of your quiche, so knowing the basic ratio makes it really easy to scale up or down. For a standard 9-inch quiche: Use 3 large eggs (6 ounces) 1 1/2 cups of whole milk or cream (12 ounces)

Can you substitute almond milk for heavy cream in quiche? ›

Eggs: the base of any quiche is eggs, so we're keeping things traditional there. Almond milk: instead of cream/milk, we're swapping with unsweetened almond milk. I think you could also add a bit of cashew cream if you're wanting to make it a tiny bit richer.

What is the formula for quiche? ›

A good quiche custard typically features: 1 large egg to 1/2 cups of dairy. The dairy can be any combination of milk and/or half-and-half, for example: 1 large egg : ½ cup milk. 1 large egg : ½ cup half-and-half.

Should quiche be cooked at 350 or 375? ›

BAKE in center of 375°F oven until center is almost set but jiggles slightly when dish is gently shaken and knife inserted near center comes out clean, 30 to 40 minutes.

What is a substitute for 1 cup of heavy cream? ›

If you have butter and milk (whole milk or even half-and-half work best), you can make your own heavy cream substitute. To make 1 cup of heavy cream, melt 1/4 cup of butter and slowly whisk in 3/4 cup milk. This works for most baking or cooking recipes that require heavy cream, but it will not whisk into stiff peaks.

What is a quiche without pastry called? ›

A frittata, sometimes called a crustless quiche, has no crust, and you can bake it directly in a pan or skillet. 2. The filling: A quiche is a custard tart, but a frittata contains less dairy.

Why is my crustless quiche soggy? ›

If your quiche appears too watery to serve it could be because it was overbaked or underbaked, the egg to dairy ratio was not correct, the ingredients have too much liquid or it was baked on the wrong rack in the oven.

Should I Prebake a pie crust for quiche? ›

And yes, as you'll see, you should always prebake quiche crust to avoid a gummy pastry. Preheat the oven to 450°F. Roll out your homemade or purchased refrigerated dough into a 12-inch circle.

What is a good substitute for blind baking beans? ›

A large bag of rice is often inexpensive to invest in and can easily fill in a large pie crust area without problems. These medium-size pieces can cover a relatively large area with just a handful of them. Lentils are a colorful option and can easily be poured into the pie crust as a weight to keep the crust firm.

What happens if you don't blind bake? ›

There are two times when blind baking is necessary: When we're making a custard pie or when the pie filling is unbaked. With a custard pie, like a pumpkin pie, the moisture in the filling can make the crust soggy before it has time to actually bake.

Can you replace heavy cream with milk in quiche? ›

The answer is, yes you can, which is a relief. You do need some fat in there to help it set, but you can get that from the cheese. Using just milk and eggs as the basis for the filling works perfectly well and I figure you are more likely to have these ingredients in, which is way more helpful.

Is it better to bake with milk or heavy cream? ›

Whole milk is a good choice for general cooking and baking, as it adds richness and flavor without being too heavy. Heavy cream and heavy whipping cream are best for recipes that require a thick and creamy texture, or for making whipped cream.

Is it better to use milk or heavy cream? ›

You can substitute regular milk for cream when you are trying to lower the fat content and overall calorie count of your meal. Take note that milk has fewer fat solids than cream, so it will be more watery and less viscous, and it will also taste notably less rich.

Is milk or heavy cream better for eggs? ›

What about a splash of milk or cream? This can give you more leeway when quick-cooking eggs and help keep the eggs softer, but isn't really necessary with our slow-cooked version. Even so, I still like the touch of velvety richness a tablespoon of heavy cream adds to the eggs.
