Pretzel Dog Dough –

  1. In a bowl, or kitchen aid mixer add the flour and salt.
  2. In a separate bowl, combine the warm water, melted butter, yeast, and sugar and allow the yeast to activate.
  3. Add the yeast mixture to the flour mixture and knead with the dough hook attachment until well combined.
  4. Cover the dough and allow it to rise for 1 hour.
  5. Bring water to a boil in a large pot, add in the baking soda and mix.

Shape the Dough-

  1. Divide the dough into 12 equal parts and roll out each piece into an 18-inch rope. Wrap the rope around a hot dog and pinch to seal the ends so the dough does not unfold. Repeat with all the dough.

Water Bath & Baking –

  1. Add 3 at a time into the water bath for 30 seconds and remove with a large strainer spatula. Add the dogs onto the baking sheet. Top with coarse salt, this is optional.
  2. Bake them at 450F for about 14-16 minutes or until they are crispy and golden.
  3. Serve with your favorite dipping sauces. Enjoy!

Ingredients

Pretzel dough-

  • 1 1/2 cups warm water, 110°F
  • 2 ¼ tsp active dry yeast
  • 1 ½ tsp salt
  • 1 Tbsp granulated sugar
  • 3 Tbsp unsalted butter, melted
  • 4 cups all-purpose flour, measured then sifted

Water bath-

Instructions

Prepare pretzel dough-

  • In a bowl or kitchen aid bowl add the sifted flour and salt and mix.

  • In a separate bowl, add the warm water, yeast, sugar, melted butter and mix. Allow to sit for about 5 minutes, allowing the yeast to activate. Pour the mixture into the flour.

  • With a kitchen aid hook attachment or by hand, knead the dough until well incorporated.

  • Cover the dough and allow it to rise for 1 hour.

Shape the pretzel dogs-

  • In a large pot bring the water and baking soda to a boil.

  • Preheat the oven to 450°F and line a large baking sheet with parchment paper.

  • Once the dough has risen, flour workspace and add the dough onto the work space.

  • Divide the dough into 12 equal parts. Roll out each piece into about an 18 inch rope and then wrap the dough around a hot dog pinching the sealing ends so that it does not unfold.

  • Repeat with all 12 hot dogs and the rest of the dough.

  • Add about 3 pretzel dogs at a time in the water bath for about 30 seconds, with a strainer spatula remove the pretzel dogs then add them to the prepared baking sheet. Top with coarse salt if desired.

  • Bake the pretzel dogs at 450°F for about 14-16 minutes or until crispy and golden.

        Just want to confirm before I start making this, it says 1/3 cup of soda, which is 43g, is it right amount? Never added so much soda, afraid can feel it in the pretzel dog, thank you.
