I tried four recipes before I settled on this Keto Ice Cream. The others weren't inedible by any means as the empty containers can attest to, but none were this creamy, this smooth, and this delicious. This is going to be the best, easiest keto ice cream recipe you've ever made.

I just got a new ice cream maker last week, and I've been playing with it. I was determined to find a recipe that didn't require making a custard because I know myself.

I won't do it and then it will be time to make ice cream and I'll be about half a day away from having it. So I had to find something that worked without a custard.

Thelow carb Ice Cream recipe I settled on is borrowed heavily from the Serious Eats Ice Cream recipe with only one minor tweak, which was my addition of xanthan gum, and a sugar-free sweetener.

Not only was this tasty, but I got two different textures from one recipe. When freshly made, theLow Carb Ice Cream is like a soft serve, and very creamy. Once it's cured for a bit, it's a lot more like regular ice cream. Two different tastes from the same recipe make it fun.

Is Keto Ice Cream Good?

Heck yeah, it is. Of course, I'm a little biased since this is my recipe. But I have trouble keeping it in my freezer without even my non-Keto friends stealing a bite.

Can You Make Keto Ice Cream Without Eggs?

A lot of ice cream recipes use eggs as an ingredient. Since I'm all about #ruthlessefficiency I wanted a recipe that omitted the cooking step. Plus, the faster it's ready to eat, the better. Am I right? For that reason, I decided that a Keto ice cream recipe without eggs was the one for me.

How To Make This Keto Ice Cream Recipe

  • Mix together sweetener, dry milk powder, and xanthum gum, and whisk well to avoid lumps.

  • Pour in the milk, cream, and vanilla extract and mix until the sweetener is dissolved.

  • Pour into ice cream maker and churn until set.

  • it tastes a lot creamier when fresh, and a lot more like ice cream when it's been allowed to cure in the freezer. Try it both ways and see which you prefer.

The xanthum gum helps the ice cream thicken, and the powdered milk keeps crystals from forming over time.

    I've tried several recipes that don't require making the pudding and this is the best. I've made it with whole milk and also with unsweetened almond milk. Both good. This recipe makes 4 cups of mix. I use a cup at a time in my little Dash My Pint and keep the remaining mixture in the fridge for the next day. I add 2 T of instant decaf coffee (dissolved in a little hot water and cooled. then use that as part of the 1 cup of milk) When it finishes churning, I add some sugar free chocolate chips for Jamoca chip ice cream.

      I made this with 2 cups of whipping (heavy) cream. I did not want to overflow the freezer canister. No whole milk. No milk powder. I used Xanthan gum (1/4 tsp) and a half tsp of food-grade vegetable glycerin as suggested by another commenter, I added about 1/3 cup of SIFTED Swerve POWDWERED sweetener so it would blend easily and not have lumps. Also 1/3 of a cup of SIFTED Rodelle Dutch-process cocoa powder and 2 tsp of pure vanilla. 20 minutes in the machine and I had rich creamy no carb ice cream which I portioned into 4 containers and put in the freezer. I should mention this was my first time making Ice cream ever, and I just purchased a Cuisinart Indulgence machine so I could make Keto ice cream for my husband. I may be able to add another cup of heavy cream next time because there was room in the canister for more. Very happy with this recipe and after doing loads of research and lots of Keto baking I strongly recommend the xanthan gum addition.

    This is the best recipe for Keto ice cream I have found that doesn't use eggs. I tried another recipe but it called for erythritol. Do not use erythritol as it hardens the ice cream to rock and impossible to eat. For this recipe I added fresh raspberries to the ice cream maker and when I poured into container I swirled sugar free vanilla syrup through before putting lid on and freezing. Yummy, it's brilliant, thank you!

    I want to make fresh strawberry ice cream. Would the proportions of the rest of the recipe change if I added 1 cup of diced strawberries?

      Everything else should stay the same. Adding the berries will increase the amount of moisture in your ice cream so don't be alarmed if it is a little thinner than it would be without the berries.

    EXCELLENT--really creamy. I left out the powdered milk---but I did add 1/2 tsp or so of food grade vegetable glycerin. Between that & the xanthan gum, it froze creamy & no icey or chalky consistency. I say this is a WINNER!! 10 stars.

    For the sweetener it says 1/3 cup but 0.33 grams. What do I use? 1/3 cup seems like a LOT of stevia ( the brand you showed is stevia ) but it can’t possibly be 0.33 gr.

      There’s really no such thing as a good that is keto or not keto. It comes down to daily macros and even at that, there is a wide variation of carb ranges that people can maintain for ketosis.
