These deliciously fluffy dairy and egg-free allergy-friendly pancakes use flour, soy milk, baking soda, salt and a little sugar.

When my two-year-old daughter was 14 months old she was tested for allergies. We discovered that Lani is allergic to eggs, dairy, and beef. Just a few weeks ago she was retested during her one-year checkup. We were pleased to find out that her egg allergy is pretty much nonexistent. The next words out of the allergist’s mouth were that her beef and dairy allergies had worsened. WHAT?

We now have to be even more careful with Lani’s allergies and diet. She used to be allowed milk baked into foods such as pancakes, waffles, cookies, etc. since her allergy wasn’t too severe at the first appointment. Now she can have NO dairy in her food at all.

With this in mind, I went in search of a pancake recipe that was allergen friendly. For each recipe, I needed ingredients that I didn’t have in my cupboard or refrigerator. So, I decided to adapt one of the recipes in my old cookbook. I used an egg replacer that I found online last year when we first found out about Lani’s allergies. Here is the recipe:

Ingredients

  • 2 cups flour
  • 2 tbsp baking powder
  • 1 tsp baking soda
  • 2 tbsp sugar (you could use the vanilla soy milk and eliminate this)
  • 2 cups plain soy milk
  • 1 tsp salt
  • 1 egg (to replace this add 1 additional tsp. baking powder, 1 tsp water, 1 tbs vinegar)

Instructions

We all LOVED these pancakes! They were light, fluffy, and full of flavor. I will wake up tomorrow morning to make another batch for freezing. This is much more economical than purchasing the “vegan” (egg, dairy-free) pancakes in my freezer section.

*As a side note please speak to your physician if you are not sure if your child or family member can have these pancakes. Each person’s allergies are different and I wouldn’t want anyone to have an adverse reaction.*

    Can you use Rice or Almond milk in those? We are allergic to soy over here, too.

    My son is allergic to milk and peanuts. He was also just re-tested and his milk allergy has gotten worse. We have been avoiding milk in everything already so I’m not sure what else we can do. Anyway, I was told by our dietician that Silk Soy is cross-contaminated with cows milk. We were told to only buy
    8th Continent. I read the chocolate chip cookie recipe that you plan on trying and it sounds good. However, have you been able to find chocolate chips that don’t contain milk? I make soy milk pancakes a lot and we love them!

    My daughter developed a dairy allergy that we found out about around a year old. She is now two and we can start giving her dairy in things but still no cows milk. one of the things we do with her is, we give her vegan probiotic pills. I open the capsual and pour it in her soy milk daily. it has help a lot.

    Mandy~ Hi Mandy. I am so sorry to hear about your son’s allergies. I have not heard about Silk soy being cross contaminated with cows milk other than a recall a few months ago. That was only the smaller containers, not the half gallons. I will be sure to contact silk for information on this.

    The “Sam’s Choice” semi sweet chocolate chips from Walmart are dairy free. I am not sure about any cross contamination because I do not have a package right now in my pantry. Fortunately we do not have to worry about that in our home.

    Glass of Whine~Hi there…I have only used plain or vanilla in my pancakes. I would definitely give it a try. Maybe make a smaller batch in case they turn out blah:)

    Leah- where do you find the vegan probiotic pills? I was giving my son probiotics until we discovered his milk allergy.
